Simple Chicken Tagine
Ingredients
- 2 -3 Tblsp Olive oil
- 1 Tblsp Cumin (ground)
- 0.5 - 0.7b Tblsp Allspice (ground)
- 0.5 - 0.7b Tblsp Cinnamon (ground)
- One Brown Onion
- 0.5 Sweet potato
- 0.5 Zucchini
- Chicken pieces (maryland works well)
- 4 - 6 Dates
Preparation
You need some form of Tagine pot - I use a pair of steel pots which are designed to sit on top of each other to form a kind of dutch oven but they also work well as a Tagine
- Heat base over very low heat and add olive oil and spices (cumin, allspice and cinnamon) - stir and cook spices for a minute or two.
- Finely dice onion; increase heat to low-medium and add onion to pan; mix and cook for a minute or two
- Roughly dice the sweet potato and zucchini and add to the pan
- Add chicken pieces to pan
- Mix ingredients in pan and cook for five minutes to get the heat through the ingredients
- Halve and de-seed the dates, add around the top of the mixture in the pan
- Move pan to very low heat hob and add lid
- Cook for at least two hours, try to avoid lifting the lid to check as moisture will be lost.
