Slow Cooker Stew - Chicken, Sausage and veggies

Ingredients

Preparation

  1. Eggplan, pumpkin, beetroot, onion: chop into large chunks and add to slow cooker
  2. Add whole chicken thighs
  3. Chop sausages into thirds and add
  4. Add whole dried lemons (placed evenly around for better flavouring)
  5. Scatter mixed herbs to taste over mixture
  6. Pour passata over mixture
  7. Add water until just covering the mixture in the slow cooker
  8. Turn slow cooker onto High and cook for 4 hours
  9. Turn slow cooker down to Low and cook for another 2-4 hours.

Tasty served on couscous.
