Simple Chicken Tagine



You need some form of Tagine pot - I use a pair of steel pots which are designed to sit on top of each other to form a kind of dutch oven but they also work well as a Tagine

  1. Heat base over very low heat and add olive oil and spices (cumin, allspice and cinnamon) - stir and cook spices for a minute or two.
  2. Finely dice onion; increase heat to low-medium and add onion to pan; mix and cook for a minute or two
  3. Roughly dice the sweet potato and zucchini and add to the pan
  4. Add chicken pieces to pan
  5. Mix ingredients in pan and cook for five minutes to get the heat through the ingredients
  6. Halve and de-seed the dates, add around the top of the mixture in the pan
  7. Move pan to very low heat hob and add lid
  8. Cook for at least two hours, try to avoid lifting the lid to check as moisture will be lost.
